A new system for management of chat history has been released and with that saving history has been made mandatory so there is no longer any option to turn it off.
Along with this change:
1. chats are saved as single messages, but are combined if you open one,
2. you can no longer forward chats,
3. chats you are involved in will appear in your Sent Mail, and
4. chats you are invited to join will show in your Inbox.

I wanted to provide you all with an update:
I've let the team know about this issue and all of your feedback. They've acknowledged the issue and will be changing the behavior such that in the future chat messages that you send will no longer show under the Sent Mail label.
Please note that this change will be rolling out over the next few weeks.
